Ingredients

  • 10 oz. broccoli, chopped
  • 1 medium onion, chopped
  • 1 stick oleo
  • 10 oz. can cream of chicken soup
  • 1/2 cup milk
  • 1 cup Velveeta cheese or Cheez Whiz
  • 1 cup uncooked rice
  • 1 boiled chicken
  • 1 tsp. salt

Instructions

  1. Cook the chicken in water with 1 teaspoon salt until done. Drain and debone.
  2. Use 2 cups of the chicken broth to cook the rice until tender.
  3. Sauté the chopped onion and broccoli in oleo until softened.
  4. In a mixing bowl, combine the cooked chicken, rice, sautéed vegetables, cream of chicken soup, milk, cheese, and salt.
  5. Pour the mixture into a casserole dish and bake at 350°F for 30 minutes or until bubbly hot.
