Ingredients

  • 6 lb. hen or two 3 lb. fryers or chicken pieces
  • 2 ribs of celery
  • 2 whole carrots

Instructions

  1. Wash and cut the hen into frying pieces.
  2. Salt and pepper the chicken pieces.
  3. Place the chicken in a large saucepan and cover with water.
  4. Bring to a boil and cook on stovetop until the meat is done, about 1 hour, or 45 minutes in a pressure cooker.
  5. Remove the chicken from the pot.
  6. Discard the celery and carrots.
  7. Strain the broth to remove any solids.
