Chicken Bubba
Ingredients
- 4 skinless, boneless chicken breast halves ⓘ
- 2 Tbsp. olive oil ⓘ
- 12 to 14 baby carrots ⓘ
- 1/2 lb. mushrooms, sliced ⓘ
- 2 chopped green onions ⓘ
- 2 cloves garlic, chopped ⓘ
- 1/2 c. dry white wine
- 1 c. chicken broth ⓘ
- 1 Tbsp. tomato paste ⓘ
- 1 bay leaf, crumbled ⓘ
- 1 tsp. dried thyme ⓘ
- 2 Tbsp. Dijon mustard ⓘ
- salt and pepper ⓘ
Instructions
- Sprinkle chicken on all sides with salt and pepper.
- Brown chicken in oil over medium heat on both sides.
- Pour off grease. Add carrots, mushrooms, onions and garlic.
- Stir and continue cooking about 3 minutes.
- Sprinkle flour evenly over mixture and stir.
- Add wine and stir.
- Add broth, tomato paste, bay leaf, thyme and mustard; stir.
- Cover and simmer 10 minutes.
- Uncover and cook for 5 minutes until thickened.
- Serve over rice.
