Chicken Burgundy

Ingredients

  • 1 chicken, cut into 8 pieces (about 3 1/2 lb.)
  • 2 Tbsp. flour
  • 1/2 c. diced ham
  • 1 c. mushrooms
  • 10 small white onions
  • 1/4 c. butter
  • 1 tsp. salt
  • 1 bay leaf
  • 2 cloves
  • 2 garlic cloves, crushed
  • 1 pt. Burgundy wine
  • 1 c. cream
  • 1 slice diced white bread
  • pinch of black pepper

Instructions

  1. Roll chicken thoroughly in flour. Fry in saucepan with butter, ham, mushrooms and onions until golden brown. Add salt, pepper, bay leaf, cloves, garlic and wine.
  2. Cover and cook in a moderate oven at 350° for at least 45 minutes, adding a little water during cooking, if necessary. When done, turn out on the serving dish and deep warm.
