Ingredients

  • 2 whole chicken breasts (deboned and flattened)
  • salt and pepper
  • Dijon hot mustard
  • mozzarella cheese
  • Italian seasonings
  • 3 fresh tomatoes (cut-up)
  • 1/2 pint mushrooms (sliced)
  • 1 bunch green scallions (cut-up)
  • 1/2 pint vermouth or sherry cooking wine
  • 1/2 pint olive oil

Instructions

  1. Debone and flatten the chicken breasts between two pieces of wax paper.
  2. Season the chicken with salt, pepper, Dijon hot mustard, mozzarella cheese, and Italian seasonings.
  3. Roll the chicken like a jelly roll.
  4. Fry the rolled chicken in 1/2 pint of olive oil for about 3 minutes on each side.
  5. Meanwhile, chop the fresh tomatoes, slice the mushrooms, and cut up the scallions.
  6. In a separate pan, simmer the chopped tomatoes, sliced mushrooms, chopped scallions, and 1/2 pint of vermouth or sherry in 1/2 pint of olive oil for 3 minutes.
  7. Place the cooked chicken on top of the simmered ingredients.
  8. Cook everything together for an additional 5 minutes on medium heat.
