Chicken Cantaloupe Ring

A fresh and elegant salad featuring tender chicken, sweet grapes, and crunchy almonds served inside sweet cantaloupe slices, perfect for light lunches or summer gatherings.

Ingredients

  • 2 c. cubed cooked chicken
  • 1 c. chopped celery
  • 1 c. halved seedless green grapes
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 c. mayonnaise
  • 1 cantaloupe
  • 1/2 c. salted toasted almonds

Instructions

  1. Toss the cooked chicken, chopped celery, halved grapes, lemon juice, salt, and pepper together in a bowl.
  2. Stir in mayonnaise until well combined.
  3. Chill the mixture for 2 hours to allow flavors to meld.
  4. Cut the cantaloupe into slices across the whole fruit.
  5. Remove the seeds and peel from each cantaloupe slice.
  6. Place each cantaloupe slice on a lettuce leaf on a salad plate.
  7. Fill the hollow center of each cantaloupe slice with the chilled chicken salad.
  8. Garnish with salted toasted almonds before serving.
