Chicken Chianti

Ingredients
- 6 boneless chicken thighs
- 2 Tbsp. olive oil ⓘ
- 8 oz. sliced crimini or white mushrooms
- 3 Tbsp. unbleached flour ⓘ
- 1 c. chopped onion ⓘ
- 1/2 c. chopped carrot ⓘ
- 1 c. Chianti or other red wine ⓘ
- 1 c. chicken broth ⓘ
- 1 Tbsp. tomato paste ⓘ
- 1 to 2 cloves garlic ⓘ
- 1 tsp. dried Italian seasoning ⓘ
- salt and ground pepper to taste ⓘ
Instructions
- Remove and discard visible fat from chicken thighs.
- Cut chicken into 1 1/2-inch cubes and set aside.
- Heat olive oil in a large nonstick skillet over medium-high heat.
- Add sliced mushrooms and saute until lightly browned, then remove with a slotted spoon and set aside.
- Add chopped onion, chopped carrot, and minced garlic to the skillet and cook until softened.
- Sprinkle flour over the vegetables and stir to combine, cooking for about 1 minute.
- Pour in red wine (Chianti) and chicken broth, stirring to deglaze the pan.
- Add tomato paste and Italian seasoning, stirring well.
- Return the chicken cubes to the skillet, bring to a simmer, cover, and cook for about 25 minutes or until chicken is cooked through.
- Uncover and cook for an additional 5-10 minutes to thicken the sauce if needed.
- Season with salt and ground pepper to taste, then serve hot.
