Ingredients

  • 1 large pkg. chicken cutlets
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 tsp. minced garlic
  • 1 bag potato chips
  • 4 eggs
  • 1 lb. spaghetti
  • 1 jar Ragu meatless spaghetti sauce

Instructions

  1. The day before cooking, clean the chicken cutlets and season them with salt, pepper, and minced garlic to allow the flavors to soak in.
  2. The next day, crush the potato chips and place them in a bowl.
  3. Beat the eggs in a separate bowl.
  4. Dip each chicken cutlet in the beaten eggs, then coat thoroughly with the crushed potato chips.
  5. Bake the coated chicken cutlets at 325°F for 45 minutes, checking with a fork to ensure they are cooked through. If not, continue baking a little longer.
  6. While the chicken is baking, cook the spaghetti according to the package instructions.
  7. Heat the spaghetti sauce in a saucepan.
  8. Combine the cooked spaghetti with the heated sauce.
  9. Serve the spaghetti alongside the crispy chicken cutlets.
