Ingredients

  • 1 large head cauliflower
  • 4 cloves garlic
  • 3 Tbsp. olive oil
  • 3 cans chicken broth (13 to 14 oz. size)
  • 16 oz. thin spaghetti
  • 1 cup fresh, unseasoned bread crumbs

Instructions

  1. Brown bread crumbs in a nonstick frying pan over medium heat.
  2. Stir constantly; pour into a bowl and set aside for later use.
  3. Clean cauliflower and cut into small flowerets.
  4. Cover the bottom of a 4-quart pot with olive oil.
  5. Add garlic and cauliflower. Season with salt and pepper to taste.
  6. Cook, covered, over medium heat for 10 to 15 minutes, stirring often.
  7. Add chicken broth to the pot.
  8. Turn heat to high and bring to a boil.
  9. Lower heat and simmer for 10 minutes.
