Ingredients

  • 4 lb. hen, stewed
  • 1 c. cooked rice
  • 4 eggs, beaten
  • 2 c. fresh bread crumbs
  • 1/2 c. milk
  • 1 c. broth
  • 1 c. pimento, chopped
  • 1 1/2 tsp. salt

Instructions

  1. Pick meat off bones when cooled.
  2. Cut the meat into bite-sized pieces if necessary.
  3. Add the cooked rice, beaten eggs, bread crumbs, milk, broth, chopped pimento, and salt to the chicken.
  4. Mix thoroughly to combine all ingredients.
  5. Pour the mixture into a good size casserole dish.
  6. Bake at 350°F for 1 hour.
