Creamy and flavorful green chicken enchiladas feature shredded cooked chicken rolled in fried corn tortillas, topped with savory green chili sauce and melted cheese. Ingredients

  • 1 (28 oz.) can Las Palmas Green chili enchilada sauce
  • 2 cups shredded cooked chicken breasts
  • 12 corn tortillas
  • 2 cups shredded Mozzarella cheese
  • chopped black olives (optional)

Instructions

  1. Mix shredded chicken and 1/2 cup of green enchilada sauce in a saucepan.
  2. Fry corn tortillas in vegetable oil until medium fried, then drain on paper towels.
  3. Dip a tortilla in green enchilada sauce to coat.
  4. Scoop some of the chicken mixture onto the tortilla, sprinkle cheese inside, then roll up the tortilla.
  5. Repeat the process for each tortilla.
  6. Place the rolled enchiladas in a baking tray, spread remaining enchilada sauce on top, and sprinkle with shredded cheese.
  7. Bake in the oven until cheese is melted and bubbly, about 20 minutes.
