Ingredients

  • seasoned flour
  • 1 1/2 Tbsp. chopped shallots
  • 3/4 c. white wine
  • 1 c. coarsely chopped tomatoes
  • 1 1/2 tsp. lemon juice
  • 3/4 c. heavy cream
  • 2 tsp. fresh tarragon or other herb
  • salt and pepper to taste

Instructions

  1. Dredge chicken in seasoned flour.
  2. Heat butter in a large saute pan until butter stops sputtering.
  3. Place chicken pieces in the hot butter in the pan and cook until golden.
  4. Brown the second side, then add chopped shallots.
  5. Continue cooking for a minute or two, then add the white wine.
  6. Stir to dissolve browned particles from the bottom of the pan.
  7. Add chopped tomatoes and lemon juice.
  8. Cook, stirring for a few minutes, then add heavy cream and tarragon.
