Tips & Substitutions

For added flavor, marinate the chicken in Italian herbs for 30 minutes before cooking. If you don't have Contadina chunky tomatoes, any canned diced tomatoes can work as a substitute. Consider adding fresh basil or oregano for a fresh touch. This dish also pairs beautifully with Low-Fat Pasta Primavera for a lighter meal option.

Serving Suggestions

Serve the Chicken Mozzarella over a bed of hot cooked pasta or rice for a comforting meal. It also goes well with a side salad or steamed vegetables for a complete dinner. For a fun twist, try it with roasted vegetables or alongside Italian bread for dipping in the sauce.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken and sauce in a skillet over medium heat until warmed through, adding a splash of water if necessary to maintain moisture. Alternatively, you can microwave it in short intervals.

Frequently Asked Questions

Can I use chicken thighs instead of chicken breasts?

Yes, chicken thighs can be used instead of chicken breasts for a richer flavor. They may require a bit more cooking time, so ensure they reach an internal temperature of 165°F for safety. The thighs will also add more moisture to the dish.

What type of pasta goes best with this recipe?

Any pasta shape works well, but larger shapes like penne or fettuccine can hold the sauce better. For a healthier option, consider whole wheat or gluten-free pasta. This dish can also pair beautifully with a side of Berardi Pasta for a delightful experience.

Can I make this dish ahead of time?

Absolutely! You can prepare the chicken and sauce ahead of time and store them separately. Just reheat the chicken in the sauce when ready to serve. This is a great option for meal prep or hosting, as it allows for easy assembly when needed.
