Ingredients

  • 1/2 c. sweet butter, softened
  • 3/4 c. grated Monterey Jack cheese
  • 1/4 c. grated Romano or Parmesan cheese
  • 4 egg yolks
  • 1 c. whipping cream
  • 2 (10 3/4 oz.) cans condensed chicken broth
  • 2 cans water
  • 1 c. dry white wine
  • 4 oz. coil vermicelli or capellini or other very fine noodles

Instructions

  1. Beat the softened butter until very soft, then beat in the grated Monterey Jack cheese, grated Romano or Parmesan cheese, and egg yolks.
  2. Gradually mix in the whipping cream until smooth.
  3. Heat the canned chicken broth, water, and white wine to boiling in a large pot.
  4. Add the broken pasta into the boiling mixture.
  5. Boil gently for 8 minutes until pasta is tender.
