Ingredients

  • 1 whole fryer
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons shortening
  • 2 eggs
  • sweet milk

Instructions

  1. Boil the whole fryer until tender. Remove from broth and set aside to cool.
  2. Mix all-purpose flour, salt, and baking powder in a bowl.
  3. Cut in shortening until the mixture resembles coarse crumbs.
  4. Add beaten eggs and enough sweet milk to make a stiff dough.
  5. Roll out the dough very thin on a heavily floured board.
  6. Cut the dough into pieces using a pizza cutter or knife.
  7. Drop the cut dough pieces into rapidly boiling broth.
  8. Cover and simmer on very low heat for 5 to 10 minutes.
  9. Remove skin and bones from the cooked chicken and pull into bite-sized pieces.
  10. Add the chicken to the pot and season to taste with black pepper.
  11. Pour about a cup of sweet milk into the pot just as it's finished cooking.
