Ingredients

  • 5 cups round tortilla chips
  • 1 (16 oz.) can refried beans
  • 2 cups grated Monterey Jack cheese
  • 1/2 cup salsa
  • 2 cups cooked turkey or chicken
  • 1 teaspoon Mexican seasoning
  • 1 green onion, chopped
  • 1 tomato, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Place the tortilla chips in a 13 x 9-inch glass baking dish.
  3. Mix refried beans, 1 cup cheese, and salsa until blended; spread evenly over the chips.
  4. Mix cooked chicken and Mexican seasoning; sprinkle over the bean mixture.
  5. Top with remaining cheese and chopped green onion.
  6. Bake for 8 to 10 minutes until cheese is melted and bubbly.
  7. Remove from oven and top with chopped tomato.
