Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic
  • 4 medium chicken breasts, boned or 8 to 10 boneless
  • 2 lb Italian sausage links
  • 2 cups Orobianco or medium-dry white wine
  • 1/2 lb fresh mushrooms, sliced
  • 1 teaspoon salt
  • 1/4 cup water

Instructions

  1. About 1 1/2 hours before serving, in a 12-inch skillet over medium heat, heat the olive oil and cook garlic until golden. Remove and discard garlic.
  2. In the drippings, over medium heat, brown the chicken breasts and sausage links, a few at a time.
  3. Pour off all but 2 tablespoons of drippings.
  4. Return the chicken and sausages to the skillet.
  5. Stir in the wine, sliced mushrooms, and salt; bring to a boil.
  6. Reduce heat to low, cover, and simmer for 30 minutes or until the chicken is fork-tender.
  7. Arrange the chicken and sausages on a warm platter.
  8. In a cup, blend water and cornstarch until smooth.
  9. Stir the water-cornstarch mixture into the hot liquid in the skillet.
  10. Cook over medium heat until the mixture thickens into a gravy.
  11. Pour the wine and mushroom gravy over the chicken and sausage pieces and serve over noodles.

Tips & Substitutions

For a richer flavor, consider using homemade chicken broth in place of water when thickening the gravy. You can substitute the Italian sausage with turkey sausage for a lighter option. If you prefer a different wine, a dry Riesling works well too. Don't skip browning the meat; it adds depth to the overall dish. For a twist, try serving with fettuccine instead of noodles.

Serving Suggestions

Serve Chicken Orobianco over a bed of noodles or fettuccine for a hearty meal. A side of steamed green beans or a fresh salad complements this dish beautifully. For a complete Italian experience, pair it with garlic bread or a light white wine. This dish also works wonderfully with other Italian recipes for a themed dinner night.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of water or broth to prevent drying out. You can also use the microwave, but be cautious to heat in short intervals to maintain moisture. This dish can also be frozen for up to 2 months.

Frequently Asked Questions

Can I use skin-on chicken for this recipe?

Yes, using skin-on chicken will add extra flavor and richness to the dish. Just be sure to adjust the cooking time slightly, as it may take a bit longer to cook through. Remember to remove the skin before serving if you prefer a leaner meal.

What type of mushrooms are best for this dish?

While fresh button mushrooms are commonly used, cremini or shiitake mushrooms can add a deeper flavor. You can also use a mix of mushrooms for added texture and taste. Just make sure to slice them evenly for consistent cooking.

Can I make this dish ahead of time?

Absolutely! You can prepare the Chicken Orobianco a day in advance and reheat it gently before serving. Just be mindful that the chicken may absorb more of the gravy overnight, so you might want to reserve some gravy to add just before serving.
