Chicken Over Rotini

Ingredients

  • 1 lb. thin chicken cutlets
  • flour
  • egg
  • milk
  • 2 Tbsp. margarine
  • 16 oz. jar pasta sauce
  • 1/4 c. cooking sherry

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat milk and egg together in a bowl.
  3. Dip chicken cutlets in the egg mixture and then coat with flour.
  4. Heat margarine in a frypan over medium heat and brown the chicken cutlets on both sides.
  5. Add jar pasta sauce and sherry to the frypan, covering the chicken.
  6. Bring the mixture to a boil.
  7. Reduce heat to low, cover, and simmer for 45 minutes.
  8. Meanwhile, cook the rotini macaroni according to package instructions.
  9. Drain the cooked macaroni.
  10. Pour the cooked chicken and sauce over the macaroni.
  11. Sprinkle grated mozzarella cheese over the top.
  12. Place in the oven until the cheese is melted and bubbly.
