Ingredients

  • 2 boneless chicken breasts
  • 16 oz. jar spaghetti sauce
  • 8 oz. grated Mozzarella cheese
  • 8 oz. grated Cooper sharp cheese
  • 8 oz. La Pecorina cheese
  • 1 lb. elbow macaroni

Instructions

  1. Preheat oven to 350°F.
  2. Boil chicken breasts until cooked through.
  3. Cube the cooked chicken into bite-sized pieces.
  4. In a separate pot, heat up spaghetti sauce and add the chicken cubes.
  5. Simmer the sauce and chicken together for 15 minutes.
  6. Cook the elbow macaroni until al dente.
  7. Mix the grated Mozzarella, Cooper sharp, and La Pecorina cheeses together in a bowl.
  8. Stir half of the cheese mixture into the chicken and sauce mixture.
  9. Spread the cooked macaroni in a baking dish and pour the chicken and sauce mixture over it.
  10. Sprinkle the remaining cheese mixture evenly on top.
  11. Bake in the oven for 15 minutes or until the cheese is browned and crispy.
  12. Remove from the oven and let stand for 5 to 10 minutes before serving.
