- Preheat oven to 350°F.
- Boil chicken breasts until cooked through.
- Cube the cooked chicken into bite-sized pieces.
- In a separate pot, heat up spaghetti sauce and add the chicken cubes.
- Simmer the sauce and chicken together for 15 minutes.
- Cook the elbow macaroni until al dente.
- Mix the grated Mozzarella, Cooper sharp, and La Pecorina cheeses together in a bowl.
- Stir half of the cheese mixture into the chicken and sauce mixture.
- Spread the cooked macaroni in a baking dish and pour the chicken and sauce mixture over it.
- Sprinkle the remaining cheese mixture evenly on top.
- Bake in the oven for 15 minutes or until the cheese is browned and crispy.
- Remove from the oven and let stand for 5 to 10 minutes before serving.
