Creamy chicken pesto pasta combines tender chicken, fragrant pesto, and smooth cream cheese tossed with rotini for a flavorful, comforting meal perfect for weeknights.

Ingredients

  • 8 oz. Philadelphia cream cheese
  • 3 oz. Philadelphia cream cheese
  • 12 oz. rotini pasta (about 3/4 of a 16 oz. box)
  • 1-2 Tbsp. pesto
  • 4 boneless skinless chicken breasts
  • 2 Tbsp. butter
  • 2 Tbsp. lemon juice
  • garlic salt

Instructions

  1. Cut the chicken breasts into cubes.
  2. Start cooking the rotini pasta according to package instructions, reserving about 3/4 of a box.
  3. In a frying pan, melt the butter over medium heat.
  4. Mix in lemon juice and cook until heated through.
  5. Add the chicken cubes to the pan, sprinkle with garlic salt and black pepper.
  6. Cook the chicken until browned and cooked through, about 5-7 minutes.
  7. In a saucepan, combine the cream cheese blocks and pesto.
  8. Melt over low heat, stirring until smooth.
  9. Drain the cooked pasta and add to the pan with the chicken.
  10. Mix in the melted pesto and cream cheese mixture until well combined.
  11. Serve immediately.
