Granny'S Easy Risotto

Ingredients

  • 1 frying chicken in pieces
  • 1 stick margarine
  • 6 celery ribs diced
  • 2 onions diced
  • 4 cups water
  • salt to taste
  • 3 cups rice
  • 6 cups hot tap water
  • 2 cups mushrooms

Instructions

  1. Place chicken pieces in a large pot and melt margarine over medium heat.
  2. Fry chicken until slightly tan.
  3. Add diced celery and onions to the pot.
  4. Cook until vegetables are translucent.
  5. Add 4 cups of water and salt, then cook until the chicken is tender.
  6. Remove chicken from the pot and let cool.
  7. Cut the chicken into small chunks.
  8. In a separate large saucepan, bring 6 cups of hot tap water to a boil.
  9. Add rice to the boiling water and cook until tender, stirring occasionally.
  10. Add sliced mushrooms to the rice during the last few minutes of cooking.
  11. Combine cooked rice, chicken chunks, and mushroom mixture.
  12. Serve hot and enjoy.
