Granny'S Easy Risotto

- Place chicken pieces in a large pot and melt margarine over medium heat.
- Fry chicken until slightly tan.
- Add diced celery and onions to the pot.
- Cook until vegetables are translucent.
- Add 4 cups of water and salt, then cook until the chicken is tender.
- Remove chicken from the pot and let cool.
- Cut the chicken into small chunks.
- In a separate large saucepan, bring 6 cups of hot tap water to a boil.
- Add rice to the boiling water and cook until tender, stirring occasionally.
- Add sliced mushrooms to the rice during the last few minutes of cooking.
- Combine cooked rice, chicken chunks, and mushroom mixture.
- Serve hot and enjoy.
