Ingredients

  • 2 qt. cherry tomatoes
  • 1/4 to 1/2 cup fresh basil
  • 2 cloves garlic
  • 2 to 3 boneless chicken breasts
  • 2 Tbsp. olive oil
  • 3/4 cup mushrooms

Instructions

  1. In a deep skillet or wok, heat olive oil over medium-high heat.
  2. Add garlic halves, cherry tomatoes, and basil; sauté until tomatoes are soft, about 5 to 7 minutes, then mash with a potato masher.
  3. Add chicken cubes and sliced mushrooms to the skillet.
  4. Reduce heat to simmer (medium-low to low).
  5. Allow to simmer until chicken is cooked through, about 10 to 15 minutes.
  6. Serve over rice or angel hair pasta.
