Chicken Saltimboccco features tender chicken wrapped in prosciutto with sage and Parmesan, baked to perfection—an elegant, flavorful dish perfect for special occasions or a sophisticated weeknight meal.

Ingredients

  • 1 1/2 tsp sage
  • 1/2 tsp pepper
  • 6 thin slices prosciutto
  • 4 Tbsp melted butter
  • 1/3 cup fine bread crumbs
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp chopped parsley

Instructions

  1. Preheat oven to 350°F.
  2. Sprinkle sage and pepper over chicken slices.
  3. Place a slice of prosciutto on top of each chicken piece.
  4. Roll up each chicken piece jelly roll style and secure with wooden toothpicks.
  5. Place melted butter in a shallow dish.
  6. In another shallow dish, combine bread crumbs, Parmesan cheese, and chopped parsley.
  7. Dip each chicken roll in melted butter, then roll in the crumb mixture.
  8. Place the coated chicken in a shallow baking dish.
  9. Bake for 40 minutes until tender.
  10. Remove toothpicks before serving.
