Ingredients

  • 4 large skinless, boneless chicken breast halves (about 1 1/2 lb.)
  • 1/4 tsp. crushed red pepper
  • lemon juice
  • 1/4 c. soy sauce
  • 1 Tbsp. salad oil
  • 1 Tbsp. molasses
  • 1 garlic clove, crushed
  • 1/2 c. creamy peanut butter

Instructions

  1. With a meat mallet or the dull edge of a French knife, pound each chicken breast half to 1/2-inch thickness.
  2. Cut chicken breasts lengthwise into 1-inch wide strips.
  3. In a bowl, mix lemon juice, soy sauce, salad oil, molasses, crushed red pepper, and crushed garlic to make the marinade.
  4. Marinate the chicken strips in the mixture for about 2 1/2 hours before cooking.
  5. Thread the marinated chicken onto skewers if desired.
  6. Grill or cook until thoroughly cooked and slightly charred, basting with remaining marinade if desired.

Tips & Substitutions

For added flavor, consider marinating the chicken overnight. If you want a spicier kick, increase the crushed red pepper or add a dash of cayenne. You can substitute honey for molasses if needed, and any nut butter can be used in place of peanut butter for a different taste. If grilling, ensure the skewers are soaked in water to prevent burning.

Serving Suggestions

Serve your chicken sate with a side of jasmine rice or a fresh cucumber salad for a refreshing contrast. A dipping sauce made from the remaining marinade or a peanut sauce pairs beautifully. For a complete meal, consider serving it alongside the French Spring Soup or a bowl of fresh fruit.

Storage & Reheating

Leftover chicken sate can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a skillet over medium heat, adding a splash of water or broth to keep it moist, and cover to heat through. Alternatively, you can microwave it in short intervals.
