Ingredients

  • 3 Tbsp. butter
  • 3 large scallions or leeks, snipped
  • 1 small onion, minced
  • 3 potatoes, pared and thinly sliced
  • 1/2 lb. raw spinach leaves, snipped finely
  • dash of pepper
  • 1 c. heavy cream
  • salt
  • 2 qt. water
  • 1/4 c. uncooked regular rice
  • 12 stalks asparagus, cut into 1-inch pieces
  • 1 carrot, pared and thinly sliced

Instructions

  1. Melt butter in a kettle.
  2. Slowly sauté scallions and onion until tender.
  3. Add potatoes, carrot, 1 1/2 teaspoons salt, and water. Cover and bring to a boil; simmer for 15 minutes.
  4. Stir in rice and asparagus. Cover and simmer for 25 minutes.
  5. Add spinach; cover and simmer for 5 minutes.
  6. Stir in 4 teaspoons salt, pepper, and cream.
