Ingredients

  • 2 Tbsp. margarine or butter
  • 1 Tbsp. lemon juice
  • 1 egg
  • 1/2 cup Italian dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 Tbsp. chopped fresh basil
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 8 boneless chicken breast halves

Instructions

  1. Put butter in a medium bowl; beat in lemon juice and egg with a fork.
  2. In another bowl, mix bread crumbs, Parmesan cheese, chopped fresh basil, salt, and pepper.
  3. Dip chicken slices into the egg mixture; coat evenly with the breadcrumb mixture.
  4. In a large frying pan, melt 2 teaspoons of butter.
  5. Cook chicken over low heat, turning once, until done.
  6. Serve with spaghetti in a red sauce.
