Ingredients

  • 2 whole boneless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 1/2 cups bread crumbs
  • 1/2 cup vegetable oil
  • 4 slices of lemon
  • salt

Instructions

  1. Skin chicken and split into halves; remove fat.
  2. Using a wooden mallet, flatten breasts to 1/4 inch thick.
  3. Season the chicken with salt and pepper.
  4. Dip each chicken breast into beaten eggs, then coat with bread crumbs mixed with Parmesan cheese.
  5. In a skillet, heat vegetable oil over medium heat.
  6. Fry the chicken until golden brown on both sides, about 5-7 minutes per side.
  7. Serve with lemon slices.
