Ingredients

  • chicken breast
  • 1 Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1 Tbsp. white wine or sherry
  • assorted vegetables of your choice, cut up
  • oil
  • 1/2 c. cashew nuts

Instructions

  1. Slice the chicken breast and marinate it in cornstarch, soy sauce, and white wine or sherry for 30 minutes.
  2. Prepare assorted vegetables by cutting them into bite-sized pieces.
  3. Heat oil in a wok or large skillet over medium-high heat.
  4. Add the marinated chicken and stir-fry until cooked through and lightly browned.
  5. Add the assorted vegetables and stir-fry until tender-crisp.
  6. Add cashew nuts and cook for another 1-2 minutes.
  7. Serve hot, garnished as desired.
