Mediterranean-inspired chicken wings simmered in a flavorful tomato and red wine sauce with aromatic herbs, perfect for gatherings or hearty family meals.

Ingredients

  • 2 1/2 lb. chicken wings
  • 1 tsp. salt
  • 1 tsp. garlic salt
  • 1 medium onion
  • 1/4 tsp. basil
  • 1 Tbsp. lemon juice
  • 3 c. tomato juice
  • 1/3 c. flour
  • 1/4 c. bacon or chicken fat
  • 1 whole clove
  • 1 tsp. parsley flakes
  • 4 small carrots
  • 1/2 c. dry red wine

Instructions

  1. Cut tips from chicken wings and discard.
  2. Coat wings with a mixture of flour and salt.
  3. Brown the coated wings in fat in a large frypan; drain excess fat.
  4. Add chopped onion, sliced carrots, garlic salt, basil, parsley flakes, and whole clove to the pan.
  5. Stir in tomato juice, lemon juice, and red wine.
  6. Heat to boiling.
  7. Cover and cook slowly for 30 minutes.
  8. Uncover and cook a few minutes longer until the sauce thickens.
  9. Serve with cooked spaghetti.
