  3. Add minced garlic and chopped mushrooms, and saute for a few minutes.

  5. Add peeled and cubed eggplant, crushed tomatoes, and chicken stock.
  6. Simmer gently until the eggplant is tender, about 20 minutes.
  7. Allow to cool briefly, then puree in a blender or food processor, optionally in batches.
  8. Return the pureed soup to the saucepan.
  9. Season with salt and pepper to taste.
  10. Stir in sliced mushrooms.
  11. Add cooked small pasta if desired.
  12. Simmer for 5 more minutes.
  13. Serve hot.
