Chicken With Black Beans

Ingredients

  • 1/4 c. black beans
  • 5 pieces garlic, crushed
  • 1 Tbsp. oil
  • 3 to 4 lb. boneless chicken, cut in 1 1/2-inch pieces
  • 1/2 tsp. salt
  • 1 medium onion, cubed
  • 2 green peppers, cubed
  • 2 Tbsp. cornstarch (with water)
  • 1 Tbsp. oyster sauce

Instructions

  1. Rinse black beans; mash and mix with garlic.
  2. Heat oil.
  3. Add bean mixture and saute for 1 minute.
  4. Add chicken and saute.
  5. Add salt and onion.
  6. Cover and cook until almost done.
  7. Add green peppers, cornstarch and oyster sauce.
  8. Cover and simmer until done.
