Ingredients

  • 6 to 8 split chicken breasts, skinned and boned
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 or less cooking oil
  • 1 lime, juiced
  • 6 Tbsp. butter
  • 1 tsp. fresh chives, minced
  • 1/2 tsp. dill weed

Instructions

  1. Sprinkle chicken on both sides with salt and pepper.
  2. In a large frying pan, heat oil over medium heat.
  3. Add chicken; sauté about 4 minutes until light brown.
  4. Turn chicken; cover and reduce heat to low.
  5. Cook for 10 minutes or until a fork can easily pierce the chicken.
  6. Remove chicken; drain off oil and discard.
  7. In the same pan, add lime juice and cook over low heat until it begins to bubble.
  8. Add butter, stirring until it becomes opaque.
  9. Stir in minced chives and dill weed.
  10. Spoon lime butter over the chicken.
  11. If needed, keep chicken warm in the pan with lime butter until ready to serve.
