Ingredients

  • 2 cups cottage cheese
  • 1 (No. 303) can creamed corn
  • 1 cup yellow cornmeal
  • 4 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cube butter, melted
  • 1 small can Ortega diced green chiles
  • 1 bar Cracker Barrel sharp Cheddar cheese
  • paprika

Instructions

  1. Put cottage cheese, creamed corn, cornmeal, eggs, baking powder, and salt in a large bowl and beat for about 1 minute until well blended.
  2. Grease a 9 x 13-inch pan.
  3. Place half of the batter in the pan, spreading evenly.
  4. Sprinkle chopped green chiles over the batter.
  5. Sprinkle all of the shredded cheese over the chiles.
  6. Spread the remaining batter on top of the cheese layer.
  7. Sprinkle with paprika.
  8. Bake in a 350°F oven for 1 hour.
