Ingredients

  • 3 slices bacon
  • 1 lb. mild Italian sausage, thinly sliced
  • 1 large onion, chopped
  • 1 large potato, peeled and diced
  • 1 cup water
  • 2 (about 1 lb. each) cans cream-style corn
  • 4 oz. can diced green chiles
  • 2 oz. jar sliced pimentos, drained
  • 2 cups half and half

Instructions

  1. In a 4 to 5-quart saucepan, cook bacon over medium heat until crisp.
  2. Remove bacon from pan, drain, crumble, and set aside. Discard all but 2 tablespoons of drippings.
  3. Add sausage and chopped onion to the drippings in the pan; cook, stirring occasionally, until the onion is soft and the sausage slices are browned, about 10 minutes.
  4. Stir in the peeled and diced potato and water; bring to a boil over high heat.
  5. Reduce heat, cover, and simmer until the potato is tender when pierced, about 15 minutes.
  6. Stir in the cream-style corn, diced green chiles, sliced pimentos, and half and half.
  7. Heat, stirring occasionally, just until steaming, being careful not to boil.
  8. Season to taste with salt and pepper.
  9. Serve the chowder garnished with the cooked bacon pieces.
