Chile Pepper Water

Ingredients

  • 1/3 cup cold water
  • 1/2 small clove garlic
  • 2 jalapenos, stemmed and halved
  • 1 tablespoon distilled vinegar
  • 2 teaspoons peeled, minced ginger
  • 1/8 teaspoon kosher salt
  • 1 1/4 cups water

Instructions

  1. Puree the first six ingredients in a blender.
  2. Bring 1 1/4 cups water to a boil.
  3. Add the pureed mixture to the boiling water and return to a boil.
  4. Cool the mixture completely.
  5. Transfer to a bottle or glass jar and refrigerate.
  6. Keeps indefinitely.
  7. Makes about 1 1/2 cups.
  8. Shake before using for a hotter sauce.
  9. Red chile peppers are used, but green can be substituted.
