Ingredients

  • 10 oz. Monterey Jack cheese, grated
  • 12 fresh green chiles or 4 jalapeno peppers, sliced
  • 6 flour tortillas
  • lard or oil for frying
  • 1 egg

Instructions

  1. Heat the oven to 300°F (150°C).
  2. Grate the Monterey Jack cheese.
  3. Cut the green chiles into thin slices.
  4. Wrap the tortillas in foil and warm in the oven for 10 minutes.
  5. Place 1/6 of the cheese on half of a tortilla.
  6. Top with chile slices.
  7. Beat the egg.
  8. Brush around the edges of the tortilla with the beaten egg.
  9. Fold the tortilla over the filling and press the edges to seal.
  10. Repeat with remaining tortillas and filling.
  11. Cover the finished quesadillas with a towel while preparing the rest.
  12. Heat about 1/2 inch of lard or oil in a large frying pan.
  13. Fry the quesadillas, turning once, until golden, about 3 to 5 minutes.
  14. Drain on paper towels.
  15. Cut each quesadilla into 3 wedges and serve hot with sour cream and salsa.
