Ingredients

  • 1 1/4 cups meal
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • dash of red pepper
  • 3/4 cup buttermilk
  • 1 (8 oz) can whole corn
  • 1 (4 oz) can green chiles
  • 2 egg whites
  • 1/2 cup shredded sharp Cheddar cheese
  • vegetable cooking spray

Instructions

  1. Combine meal and flour in a medium bowl, making a well in the center.
  2. In a separate bowl, mix buttermilk, baking powder, baking soda, salt, and red pepper.
  3. Add the wet mixture to the dry ingredients, stirring just until moistened.
  4. Fold in the shredded Cheddar cheese.
  5. Spoon the batter into a muffin or corn stick pan, filling about two-thirds full.
  6. Bake at 425°F (220°C) for 18 to 20 minutes, or until golden brown.
