Ingredients

  • 6 4-ounce cans chopped green chiles, drained well *
  • 16 ounces pepper-jack cheese (or Mexican Blend), shredded
  • 8 eggs
  • 1.5 cups heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces cheddar cheese (or Mexican blend), shredded
  • 1 medium onion

Instructions

  1. Grease an 16x8" baking pan. Mix chilis and onion in mixing bowl. Pour combination into baking pan.
  2. Top with the pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up.
  3. Beat the eggs, cream, salt and pepper well. Pour evenly over the chile mix.
  4. Top with the cheddar cheese. Bake at 350 for 45 minutes, until golden brown. Let stand 10 minutes before cutting.
