Instructions
- Grease an 16x8" baking pan. Mix chilis and onion in mixing bowl. Pour combination into baking pan.
- Top with the pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up.
- Beat the eggs, cream, salt and pepper well. Pour evenly over the chile mix.
- Top with the cheddar cheese. Bake at 350 for 45 minutes, until golden brown. Let stand 10 minutes before cutting.
