Ingredients

  • 6 (4 oz.) cans whole green chiles
  • 10 eggs
  • 8 oz. sour cream
  • 1 Tbsp. flour
  • 2 lb. grated Jack cheese
  • small amount milk

Instructions

  1. Oil a 9 x 13-inch pan and set aside.
  2. Drain the green chiles and place half of them in the bottom of the prepared pan, opening chiles if necessary to cover the bottom. Sprinkle half the grated cheese over the chiles.
  3. In a bowl, beat the eggs and thinned sour cream together with the flour until well combined.
  4. Pour the egg and sour cream mixture over the chiles and cheese in the pan.
  5. Poke the batter with a fork to ensure it seeps through the chiles and cheese.
  6. Sprinkle the top with parsley and garlic powder.
  7. Bake at 350°F (175°C) for about 1 hour until the top is golden brown.
