Chile Zucchini Bread

Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 1/2 c. green chile peppers
  • 2 c. zucchini squash, unpeeled and grated
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. soda
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 c. pecans

Instructions

  1. Cream together first 3 ingredients.
  2. Mix well.
  3. Pour dry ingredients into top 3 ingredients.
  4. Mix well.
  5. Pour into greased and floured loaf tins (2).
  6. Bake at 325° for 1 hour and 10 minutes.
