Ingredients

  • 6 green chiles
  • Cheddar cheese, grated
  • 3 eggs
  • 3/4 cup flour
  • 1/2 teaspoon baking powder

Instructions

  1. Stuff the green chiles with grated Cheddar cheese.
  2. Separate the eggs into whites and yolks.
  3. Beat the egg whites until stiff peaks form.
  4. Mix the flour and baking powder together.
  5. Gradually add the flour mixture to the beaten egg whites, one teaspoon at a time, beating constantly.
  6. Beat the egg yolks and add them to the egg-flour mixture, continuing to beat.
  7. Dip each stuffed chile into the batter, ensuring it is well coated.
  8. Deep fry the coated chiles at 375°F until golden brown.
