Ingredients

  • 2 (4 oz.) cans whole green chiles
  • 1/2 lb. grated Cheddar cheese
  • 1/2 lb. grated Mozzarella cheese
  • 8 eggs

Instructions

  1. Remove seeds from the green chiles and lay them flat in a well-greased 9 x 13 x 2-inch casserole dish.
  2. Whip the eggs until foamy, then combine with the grated Cheddar and Mozzarella cheeses.
  3. Pour the egg and cheese mixture over the chiles in the casserole dish.
  4. Bake until the eggs are set and the cheese is bubbly, about 15 minutes.
