A vibrant, fresh corn salsa with sweet corn, tomatoes, jalapeno, and cilantro, perfect for summer gatherings or as a flavorful topping for grilled dishes.

Ingredients

  • 2 c. fresh corn kernels
  • 3 Tbsp. sweet butter (cold), cut in pieces
  • 1/4 c. tomatoes, seeded and diced
  • 1 small jalapeno, seeded and minced
  • 2 Tbsp. red onion, minced
  • 2 Tbsp. cilantro, chopped
  • 1/4 c. rice wine vinegar
  • 1/8 tsp. black pepper
  • 1/4 tsp. salt

Instructions

  1. Cut raw corn off the cobs.
  2. Combine all ingredients in a saucepan over high heat and stir while bringing the salsa to a boil.
  3. When the butter has melted completely and the mixture looks like a light butter sauce, remove from heat and serve immediately.
