Ingredients

  • 1 lb ground beef
  • 2 onions minced
  • 1 1/2 tsp salt
  • 1/8 tsp garlic powder
  • 2 tsp chili powder
  • 1/4 cup wheat germ

Instructions

  1. Preheat oven to 350° F.
  2. Combine ground beef, minced onions, salt, garlic powder (if using), chili powder, wheat germ, and 1/4 cup of tomato juice in a bowl.
  3. Shape the mixture into 18 meatballs.
  4. Arrange the meatballs in a 1 1/2 quart casserole dish.
  5. Pour the remaining 3/4 cup of tomato juice over the meatballs.
  6. Cover the dish and bake for 1 hour, adding more juice if necessary.
