Ingredients

  • 2 lb beef chuck roast or thick cut round, trimmed and cubed
  • oil
  • 4 c water
  • 1 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • 1 medium onion, chopped
  • 2 small bay leaves
  • 2 tsp salt
  • 1/2 tsp pepper
  • pinch of allspice
  • 1 tsp sugar
  • carrots
  • potatoes
  • 4 beef bouillon cubes

Instructions

  1. Brown the beef in a small amount of oil in a heavy skillet.
  2. Drain off any excess oil and transfer the browned meat to the crock-pot.
  3. Add water, lemon juice, Worcestershire sauce, minced garlic, chopped onion, bay leaves, salt, pepper, allspice, and sugar to the crock-pot.
  4. Cook on low for about 8 hours or on high for 6 hours.
  5. After 2 hours of cooking, add the scrubbed and cubed carrots and potatoes.
  6. About 30 minutes before serving, add the bouillon cubes and green beans.
  7. Stir well to combine all ingredients.
  8. Just before serving, mix cornstarch with water and add to the stew to thicken the broth.
