Ingredients

  • 1 (8 oz.) can green chiles
  • 1/2 lb. Cheddar cheese
  • 1/2 lb. Monterey Jack cheese
  • 2 to 3 eggs
  • 6 1/2 oz. evaporated milk
  • 1 1/2 Tbsp. flour
  • salt
  • pepper

Instructions

  1. Put half of the green chiles on the bottom of a greased casserole dish. Top with Cheddar cheese.
  2. Add the remaining green chiles on top of the cheese layer.
  3. Sprinkle Monterey Jack cheese over the chilies.
  4. Beat egg whites until stiff peaks form.
  5. In a separate bowl, combine egg yolks, evaporated milk, flour, salt, and pepper.
  6. Fold the egg yolk mixture into the beaten egg whites gently.
  7. Pour the egg mixture over the layered chilies and cheese.
  8. Bake at 325°F (163°C) for 45 minutes.
  9. Pour tomato sauce on top and bake for an additional 30 minutes.
