Ingredients

  • 1 head broccoli
  • 2 tsp. olive oil
  • 1 medium red onion
  • 2 cloves garlic
  • 1/2 tsp. ground cumin
  • 1/8 tsp. ground cinnamon
  • 2 jalapeno peppers
  • 6 cherry tomatoes
  • 1 Tbsp. minced fresh cilantro
  • 6 (8-inch) flour tortillas
  • 1/4 c. shredded Mozzarella cheese
  • 1 c. salsa
  • 1/4 tsp. chili powder
  • 1 c. nonfat yogurt

Instructions

  1. Steam, boil, or microwave the broccoli until crisp-tender. Coarsely chop and set aside.
  2. In a large nonstick frypan, heat 1 teaspoon of olive oil.
  3. Add the chopped red onion and sauté for 3 to 4 minutes until softened.
  4. Add the minced garlic, ground cumin, chili powder, and ground cinnamon; cook for 1 minute.
  5. Add the chopped broccoli, minced jalapeno peppers, and quartered cherry tomatoes.
  6. Stir well and sauté for 3 to 4 minutes.
  7. Remove from heat and stir in the minced cilantro, if using.
  8. Place a tortilla in a heated skillet, spread a portion of the broccoli mixture on half, sprinkle with shredded mozzarella, then fold over.
  9. Cook until the tortilla is golden brown and cheese is melted, about 2-3 minutes per side.
  10. Repeat with remaining tortillas and filling.
  11. Serve warm with salsa and a dollop of nonfat yogurt.
