Ingredients

  • 1 1/4 Tbsp. unflavored gelatin
  • 1/3 c. cold water
  • 3/4 c. hot water
  • 3 (10 oz.) pkg. frozen raspberries, thawed
  • 3 1/2 c. sour cream
  • 1 1/2 c. pineapple juice
  • 1 1/3 c. half and half
  • 1 1/3 c. dry sherry
  • 1/3 c. grenadine

Instructions

  1. Soak gelatin in cold water for 5 minutes.
  2. Stir in hot water and dissolve over low heat.
  3. Push raspberries through a strainer to remove seeds, then puree.
  4. Combine all ingredients in a glass bowl.
  5. Cover and refrigerate overnight.
  6. Garnish with mint and/or whole raspberries before serving.

Tips & Substitutions

To enhance the flavor, consider using fresh raspberries if available, as they can provide a brighter taste compared to frozen. For a lighter version, substitute sour cream with Greek yogurt. If you prefer a sweeter soup, adjust the grenadine or add a bit more pineapple juice. Also, ensure the gelatin is fully dissolved to avoid any lumps in your soup.

Serving Suggestions

Serve the chilled raspberry soup in elegant bowls or cups, garnished with fresh mint leaves or whole raspberries for a pop of color. This dish pairs beautifully with a light salad or a slice of Raisin (Easter) Bread(6 Loaves) for a delightful brunch. For an added touch, consider drizzling a bit of cream on top before serving.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The soup can separate slightly, so give it a gentle stir before serving again. It’s best enjoyed chilled, and if it thickens too much, whisk in a little cold water or additional pineapple juice to reach your desired consistency.

Frequently Asked Questions

Can I use fresh raspberries instead of frozen?

Yes, you can use fresh raspberries if they are in season. They will provide a fresher taste and vibrant color. Just ensure they are thoroughly washed and pureed as directed.

Is it possible to make this soup vegan?

Absolutely! You can replace the sour cream with a dairy-free alternative like coconut yogurt or cashew cream. Additionally, ensure the gelatin is replaced with agar-agar for a plant-based thickening agent.

How can I adjust the sweetness of the soup?

If you find the soup not sweet enough, you can add more grenadine or pineapple juice according to your taste. Alternatively, a touch of honey or agave syrup can also enhance the sweetness without overpowering the raspberry flavor.
