Crispy, flavorful chimichangas filled with seasoned chicken, cheese, and vegetables, perfect for a comforting meal that combines Mexican-inspired flavors with a satisfying crunch.

Ingredients

  • 2 cloves garlic, minced
  • 2 medium onions, diced
  • 2 tomatoes, diced
  • 1 tsp. ground cumin
  • 2 c. cooked chicken, shredded
  • 1 (4 oz.) can mild green chilies, peeled, seeded and chopped
  • 1 tsp. salt
  • 8 to 10 flour tortillas
  • 1 1/2 c. Monterey Jack or sharp Cheddar cheese
  • vegetable oil for frying

Instructions

  1. Combine garlic, onion, tomato, and cumin in a bowl.
  2. Heat 1 tablespoon vegetable oil in a pan.
  3. Add the tomato mixture and cook over medium heat for 3 minutes.
  4. Lower the heat and simmer uncovered for 7 minutes.
  5. Strain the mixture and combine with shredded chicken, green chilies, and salt.
  6. Heat flour tortillas in the microwave.
  7. Place a teaspoon of the mixture in the center of each tortilla.
  8. Fold the ends of the tortilla together to enclose the filling.
  9. Fry the filled tortillas in hot vegetable oil until golden brown.
  10. Turn sides of the tortilla and fry until evenly browned.
  11. Remove from oil, drain excess oil, and serve hot.
