Ingredients

  • 10 lb. chitlings
  • 2 red pepper pods
  • 2 bay leaves
  • 1 garlic clove
  • 2 large onions
  • 1 stalk celery with leaves
  • 2 Tbsp. salt
  • 1 1/2 tsp. black pepper
  • 1/2 cup lemon juice

Instructions

  1. Clean chitlings thoroughly by washing several times in cool water, removing all gut and excess fat.
  2. Drain the chitlings for a few minutes.
  3. Place chitlings in a pot and cover with water.
  4. Add chopped red pepper pods, bay leaves, garlic clove, large onions, celery with leaves, salt, black pepper, and lemon juice.
  5. Bring the mixture to a gentle simmer.
  6. Cover and simmer for 4 hours or until tender.
  7. If using a pressure cooker, cook for 2 hours.
